The St. Regis Jakarta presents a culinary experience like no other. On the 21st of February, William Wongso, Indonesia’s legendary culinary expert, joins forces with Mazaraat Artisan Cheese, the country’s leading fromagerie, to introduce Indonesia’s first Omakase-style Cheese Dinner.

Hosted at Maisonette’s open kitchen on Level 2, this exclusive 12-seat experience offers an interactive dining concept where craftsmanship meets storytelling. Over seven meticulously curated courses, guests will discover how Indonesian cheeses—aged, bloomy, and smoked—are transformed in unexpected ways. Each dish, paired with fine wines, highlights the delicate craftsmanship of Mazaraat’s cheesemakers and Wongso’s signature approach to Indonesian flavours. Imagine smoked cheese woven into classic dishes or silky custards infused with tropical spices.

At the heart of this journey is Tejakula salt, an essential ingredient that shapes the soul of Mazaraat’s cheeses. Sourced from the northern coast of Bali, Tejakula salt is hand-harvested using centuries-old traditions, sun-dried to preserve its natural minerals, and prized for its clean, briny depth. Its influence can be tasted in every bite, elevating the cheese’s complexity and bringing a distinct sense of Indonesian terroir to the table.
