The Apurva Kempinski Bali concludes the 2024 ‘Celebration of Culinary Arts’, setting the bar high for 2025.

Launched at the beginning of the year, the ‘Celebration of Culinary Arts’ at The Apurva Kempinski Bali has been a resounding success, showcasing collaborations between the resort’s talented chefs and world-class guest chefs. Beyond delivering extraordinary dining experiences, these collaborations have created a platform for inspiring and positive exchanges between guest chefs and the resort’s culinary team, helping to uphold a legacy of culinary excellence through generations. Before the celebration carries into 2025, the 2024 ‘Celebration of Culinary Arts’ will conclude with a spectacular finale on the 15th to the 16th of November, featuring Chef Lucas Dumarski, Head Pastry Chef of the Two Michelin-starred Mezzaluna restaurant in Bangkok, in partnership with Valrhona.

Chef Lucas Dumarski, Head Pastry Chef at the Two Michelin-starred Mezzaluna in Bangkok, specialises in innovative French cuisine with a Japanese influence. With over a decade of experience in Michelin-starred establishments, he has cultivated a lifelong passion for his craft, working at Two Michelin-starred restaurants such as Pierre Gagnaire Tokyo, L’Auberge des Glazicks by Olivier Bellin, and L’Auberge de Collonges by Paul Bocuse. At Mezzaluna, Chef Lucas enjoys the freedom to creatively combine varied flavour profiles, producing unique and innovative dishes that align with Executive Chef Ryuki Kawasaki’s philosophy of letting the finest and freshest ingredients shine. This approach harmonises with The Apurva Kempinski Bali’s own philosophy, where food serves as a medium of storytelling, with each dish conveying a unique narrative that engages the senses and celebrates locally sourced ingredients.

To close the 2024 ‘Celebration of Culinary Arts’, Valrhona and The Apurva Kempinski Bali will present a special collaboration featuring Chef Lucas Dumarski alongside Chef Jean-Baptiste Natali, Executive Chef of Koral Restaurant and a Michelin-starred chef, as well as Koral’s Pastry Sous Chef Ida Bagus Gede Sujati Arsa. Together, they will serve a curated six-course menu on 16 November 2024. The celebration will also extend to Selasar Deli on 15 – 16 November, where Chef Lucas Dumarski’s pastry creations will highlight Selasar’s Artisanal Afternoon Tea, presented alongside delicacies crafted by the resort’s Executive Pastry & Bakery Chef Rizqi and Head Pastry Chef Iqbal.

Throughout the ‘Celebration of Culinary Arts’ series, the resort has welcomed an array of renowned Michelin-starred and Meilleur Ouvrier de France (MOF) guest chefs, collaborating with the resort’s talented culinary team across its various dining venues. The series began in February 2024, introducing The Apurva Kempinski Bali’s exceptional culinary team and its diverse global offerings. This was followed by collaborations with Chef Romuald Fassenet (MOF Cuisine – 2004, One Michelin-starred) in February, Chef Thierry Drapeau (Two Michelin-starred) in March, and Chef Mitsuru Konishi (One Michelin-starred) in April. From May to October 2024, the resort hosted distinguished chefs such as Chef Fabrice Prochasson (MOF Cuisine – 1996), Chef Philippe Rigollot (MOF Pâtisserie & Confiserie – 2007 and World Pastry Champion 2005), and Chef Jérôme Schilling (MOF Cuisine – 2022, Two Michelin-starred). Expanding the celebration onto the global stage, The Apurva Kempinski Bali also brought its ‘Celebration of Culinary Arts’ to Singapore, collaborating with The Capitol Kempinski Hotel Singapore for a four-hand dinner from the 6th to the 8th of November. Finally, Chef Lucas Dumarski of the Two Michelin-starred Mezzaluna in Bangkok will bring the 2024 ‘Celebration of Culinary Arts’ to a grand finale on the 15th to the 16th of November.
