New Zealand-born Head Chef and Mozaic co-owner, Chef Blake Thornley, has honed his craft from his experiences across the globe, driven by a profound passion for cooking and creativity. After leading Mozaic to new heights and opening his own successful restaurants in Shanghai, Chef Blake has returned to Mozaic Bali with an innovative vision for a contemporary immersive fine dining concept.
“The Mozaic experience is designed to engage the senses, moving beyond the traditional dining set-up. In today’s fast-paced world, no one wants to sit in one place for hours to eat their meal. By creating a dynamic environment where guests can be themselves and enjoy the freedom to move through different settings, we aim to make each visit to Mozaic a truly memorable occasion,” commented Chef Blake.
The gastronomic adventure begins in the aptly named Tipple Room, a cosy and stylish lounge decorated in Mozaic’s signature green and gold hues. Here, guests are welcomed with tantalising canapés and can choose from an extensive selection of signature cocktails or wines from the restaurant’s well-stocked wine cellar. Mozaic’s attentive staff are on hand to assist guests in their selection of the six or eight-course Seasonal or Botanical tasting menus, each paired with optional wine, cocktail, or grape-and-grain combinations. Both menus can be customised to accommodate dietary needs, including vegan and gluten-free.
The Seasonal and vegetarian Botanical menus showcase Chef Blake’s dedication to sustainability, incorporating locally sourced Indonesian produce and spices from the restaurant’s own herb garden. “There’s nothing quite like working with fresh, seasonal produce from throughout Indonesia. The flavours and ingredients are just incredible, and it’s wonderful to be able to showcase this to guests in our dishes,” added Chef Blake.
The journey then moves to the Dining Room where the Michelin-style multi-course meal continues. Under the server’s expert direction, each course begins with an introduction to the key ingredients, with a centrepiece of fresh produce in its raw form. From succulent fruits and vegetables to fragrant herbs and exotic spices, guests are encouraged to interact with the elements by touching, smelling, and even tasting them. Explore new and exciting flavours such as the earthy kluwek nut, sweet sawo, fleshy mamey sapote, creamy soursop (sirsak), and other tantalising tropical fruits. Not only does this hands-on experience foster a deeper connection with the culinary heritage of each dish, but it also creates a tantalising feast for the senses.
In the Dining Room, guests can witness first-hand Chef Blake’s culinary skills as he prepares one of the dishes directly at the table, adding a touch of theatrical flair to the night. Each course is paired with beverages that have been specifically designed to perfectly complement the flavours of the dish, creating a holistic and unique dining experience.
Before the meat course, guests are invited to transition to Mozaic’s renowned outdoor garden area where the romantic ambience of fairy lights and lush greenery sets the stage for the highlight of the evening. Diners can continue to enjoy their meal under the stars, with the outdoor open kitchen providing a unique opportunity to watch the chef’s culinary craftsmanship. Here, guests can also witness the preparation of Mozaic’s signature dry-aged duck breast, slow-cooked to mouth-watering perfection. After dining, guests are welcome to enjoy a digestive or cocktail in the Tipple Room, which is open until late for continued relaxation in its warm and sophisticated setting.
