Combining an indubitable mélange of elegance, refinement, and splendour, Bali’s top fine-dining destination Apéritif Restaurant is ready to treat its distinguished, well-travelled patrons to an epicurean voyage that celebrates a fusion of tastes, textures, colours, and cultures. Apéritif’s sophisticated, seven-course degustation menu expertly showcases why the restaurant has been at the forefront of dining creativity for the past six years, as it is ever-evolving by exploring new tastes and concepts seasonally. Food enthusiasts and brunch aficionados with an insatiable desire for premium quality ingredients and dining have a new reason to rejoice as a new dining experience makes its mark in the heart of Ubud: Pinstripe Brunch Club by Apéritif, nestled in the serene surroundings of Ubud, is thrilled to announce the launch of its all-new brunch menu, promising a culinary journey like no other.

Worth a visit for its sheer versatility alone, Apéritif’s selection of dishes draws inspiration from recipes around the globe, as imagined and reimagined by Executive Chef Nic Vanderbeeken and his team of culinary artists. These include the restaurant’s signature Venison Wellington, whose rich sauce is cleverly juxtaposed with flavours of rendang as well as the immaculate Sensation White (mango, meringue, coconut, and cheesecake crumble) and the decadent PB&J, an Apéritif signature specifically crafted by Pastry Chef Ida Ayu Chinthya Dewi using locally sourced peanuts in homage to the ingredient’s prevalence in Indonesian cuisine.

“We aim to redefine the entire experience of luxury fine dining, as we think about each guest’s enjoyment. From the space and décor to the atmosphere and quality of produce, whether local or imported, we value each little detail. At Apéritif Restaurant, quality comes first,” explains the Belgian-born Vanderbeeken, who has netted over 25 years of experience in the hospitality arena. “Our entire culinary journey reflects our philosophy—one that is unique and crosses many cultures and culinary borders. We would like to take you on a journey around the world with a well-balanced yet eclectic menu, beginning with the aperitivo at Apéritif’s very own bar, Pinstripe, where we offer a selection of high-end drinks and digestives. After enjoying your premium fine-dining experience at Apéritif Restaurant, you may return to Pinstripe Bar to further enjoy our premium spirit collection or retreat next door to spend the night at the luxury resort Viceroy Bali.

Nic also notes that many of Apéritif’s dishes have hints of Indonesia “which is also about respecting where we are and where we live, but are still international modern cuisine… We are returning memories of the various things we have tasted from our travels and life experiences, including that from Indonesia, Southeast Asia, Europe, and America.”

Meal-enders are choreographed in the manner of a graceful repertoire that closes with petit fours, and unexpectedly, a game of pool, single malt, and a prized cigar coming straight from Pinstripe Bar. An ode to the captivating tapestry of 1930s Bali, Pinstripe Bar is a world unto itself right from the very start; true to its very theme, its opening pour is dubbed The Cocktail Anthology, a series of inventive and ingenious cocktails that come in four separate sets, namely Harlem Renaissance (inspired by noted Mexican painter Miguel Covarrubias’ time in New York during the 1920s), Bali Sojourn (inspired by his sojourn in Bali in the 1930s and a vibrant chapter in Bali’s history), Pinstripe Signature (classic cocktails reimagined using local, fresh, and exotic flavours), and The Sober Guide (creative and delicious non-alcoholic options).

Using the tagline “Glass is the canvas, cocktails are our masterpieces,” each elixir at the elegant, speakeasy-like setting is specially crafted by head mixologist Panji Wisrawan, whose penchant for liquid poetry is inspired by his travels across lands and seas that unleash the unique and exotic story of Bali in every sip. “Pinstripe Bar offers a cocktail experience that is unique to Ubud. As such, we have crafted a menu to meet the elevated and transportive style of the space, which symbolises the bold fashion and cocktail culture during the Prohibition era as pinstripe suits and cocktails became popular globally during the expansion and evolution of cocktail culture as a result of prohibition alcohol restrictions in the United States,” notes Panji. “This is why I was inspired by the lively and artistic 1930s Ubud as this was part of Bali’s history wherein Miguel Covarrubias played an influential role, just like he had in Harlem the decade prior. I wanted to share this story with our dear patrons at Pinstripe Bar, which weaves local history and stories from afar with an inspired and intricate menu of exotic cocktails.”

For a heightened experience, guests can book a cocktail masterclass with Panji Wisrawan, which includes a tour of the property’s garden, tips and tricks from the trade, and high-calibre cocktails and canapés. Pinstripe Bar is also home to a cigar humidor featuring a carefully curated selection of some of the finest cigars in Asia.

Apéritif Restaurant opens daily for dinner from 5:30 PM, with kitchen hours to 8:30 PM given the length of the dining experience. Pinstripe Bar opens daily from 4 PM until late.
