ARYADUTA Bali proudly welcomed over 250 students from Apollonia Hotel School for an exclusive table manners class held in the hotel’s Grand Ballroom.
Designed to enhance the students’ understanding of fine dining etiquette, table setup, and professional dining behaviour, the event provided invaluable skills for future hospitality professionals.
The programme began with a warm welcome from Mr Rendy Prapanca, General Manager of ARYADUTA Bali, who expressed his appreciation for the collaboration and encouraged students to embrace continuous learning in the hospitality industry. This was followed by remarks from Mr I Gusti Bagus Simpen Diantara, S.M., M.Par., Director of Apollonia Hotel School, who emphasised the importance of real-industry exposure to help students build confidence and gain professional experience.
After the opening session, students were taken on a hotel tour to experience ARYADUTA Bali’s facilities first-hand, including the guest rooms, swimming pool, main lobby, PAON Restaurant, Henry’s Steakhouse, the Heavens Chapel, and the Heavenly Garden.

The highlight of the day was the table manners class led by Ms Astri Sagita, Food and Beverage Manager at ARYADUTA Bali. Sagita guided participants through the art of fine dining, covering aspects such as table setting, posture, utensil use, communication, and serving etiquette.
During the session, students were treated to a specially curated four-course set menu crafted by the culinary team at ARYADUTA Bali. The dining experience began with an amuse-bouche accompanied by dinner rolls and mini butter portions, followed by a Grilled Scallop appetiser served with cauliflower purée, tomato salsa, and tobiko. A comforting Seafood Chowder with croutons prepared the palate before the star of the menu — Beef Wellington, served with wilted spinach, mushroom duxelles, mashed potato, and gravy. A refreshing selection of lime, passion fruit, or strawberry sorbet acted as a palate cleanser, and the meal concluded with a classic Baked Apple Pie paired with vanilla ice cream.

The event concluded with enthusiastic feedback from participants, who expressed gratitude for the valuable learning experience and warm hospitality provided by ARYADUTA Bali.
