InterContinental Bali Resort welcomes William Wongso, one of Indonesia’s most respected culinary authorities and advocates of Indonesian gastronomy, for an exclusive seven-day culinary residency from 18–24 August 2026.
Set along the shores of Jimbaran Bay, the residency brings William Wongso together with Executive Chef Indrajit Saha and the resort’s culinary team for an immersive exchange of knowledge, heritage and craftsmanship. More than a culinary collaboration, the residency is designed to strengthen the foundation of the resort’s Indonesian gastronomy. Through hands-on mentoring, recipe refinement and deeper exploration of indigenous ingredients and traditional techniques, the culinary team gains greater knowledge and confidence in presenting the diverse flavours of the Indonesian archipelago.
With decades dedicated to documenting, preserving and championing Indonesia’s culinary heritage, William Wongso brings a wealth of knowledge spanning regional cuisines, traditional cooking methods, indigenous ingredients and the stories behind them. His approach is grounded in respecting the identity of each dish while allowing it to be thoughtfully refined.

Throughout the residency, the culinary team explores the nuances of Indonesian regional cuisine, from ingredient provenance and preparation to traditional techniques and the delicate balance of flavours. Existing recipes are reviewed and refined with greater precision, while preserving the character and authenticity that define their origins.
