This season, the Afternoon Tea at The St. Regis Jakarta is reimagined through a collaboration with Augustinus Bader, where science, precision, and ritual converge into moments of calm indulgence and quiet luxury.
Guided by the philosophy of Professor Augustinus Bader, the brand is globally recognised for its pioneering TFC8® technology — science-driven formulations developed through decades of regenerative research, drawing on amino acids, vitamins, and naturally inspired ingredients.
Inspired by this approach, Executive Pastry Chef Kevin Lee has curated a selection of sweet and savoury creations using ingredients aligned with the brand’s formulations, including mushrooms, algae (seaweed, kelp, and spirulina), and green tea — ingredients often associated with nutrient density and natural functional benefits.
The menu features Beef Tataki with mushroom duxelles and Miso-marinated Scallop with seaweed, alongside desserts such as a White Chocolate Tart with a blue veil using spirulina as a natural colouring, as well as Matcha Opera and a Matcha Lemon Scone.
“Translating a skincare philosophy into food was always a challenge, because the ingredients had to make sense on the plate, not just conceptually,” says Chef Kevin Lee. “We worked with mushrooms, algae, and green tea very deliberately, focusing on balance without compromising flavour.”
Available from 11 May to 18 June at The Drawing Room, this luxury Afternoon Tea reflects a shared philosophy between Augustinus Bader and The St. Regis Jakarta, where science, technique, and tradition come together while preserving the timeless essence of the ritual.
