An artful afternoon where French tradition, Indonesian heritage, and Nordic craft meet at the table.
At Sugar & Spice, Sunday has always been more than a day on the calendar. It is the hour when families gather, when old friends fall easily back into conversation, and when the simple act of sharing a table becomes something to cherish. Our Sunday Brunches have long been built on this warmth—unhurried, generous, and quietly full of the moments that stay with us.
It is from this spirit that The Coastal Atelier is born, launching on Sunday, 23rd of August 2026. It began with a simple idea: to bring new life to a Sunday already well loved, and grew into something more—a gentle meeting of land and sea, where sumptuous dishes drawn from both are served with the same care that has always defined the table at Sugar & Spice.
More than a meal, it is an afternoon to slow down, linger a little longer, and rediscover the quiet joy of good food shared in good company.

From the first moment, guests are welcomed with elegant pass-around canapés that set a graceful tone for the hours ahead. The buttery Herbs Escargot, gently baked in fragrant herb butter, offers a timeless French classic, while the iconic Lobster Thermidor presents succulent lobster in a rich Cognac and Gruyère cream, gratinéed to a golden finish—an indulgent bite that signals the artistry to come.
Throughout the afternoon, the dining room becomes a stage of its own. At the signature Gueridon Service, chefs prepare Mangut Cod Fish with Coconut Smoke tableside. Drawing on the traditional flavours of Indonesian Mangut, delicate cod is gently cooked and folded into a velvety coconut curry, then hidden beneath a glass cloche filled with aromatic coconut smoke. As the dome is lifted, the scent of toasted coconut drifts into the air, creating a captivating, multisensory moment that bridges Indonesian heritage with contemporary luxury dining.

A further highlight arrives with the Premium Open-Faced Sandwich Tray, inspired by the Scandinavian tradition of Smørrebrød and elevated with world-class ingredients. Presented tableside and assembled fresh by the chefs, guests are invited to choose from three handcrafted creations: Maine Lobster with lobster bisque aioli on toasted artisan brioche; Japanese Hokkaido Scallop with white truffle remoulade on rustic sourdough; and Wagyu Beef Tataki finished with yuzu kosho aioli on multigrain artisan bread.
Each is prepared à la minute, striking a fine balance between premium ingredients, artisanal bread, and refined condiments, transforming a simple canapé into a bespoke culinary experience that reflects the sophistication at the heart of The Coastal Atelier.
To complete the experience, a trio of thirst-quenching mocktails rounds out the spread, thoughtfully crafted to refresh the palate between helpings and echo the coastal spirit of the afternoon. Whether alongside the richness of the seafood or a lighter plate from the buffet, there is a glass to suit the moment: the bright Azure Citrus, the cool and herbaceous Tide & Green, and the sun-warmed Golden Shore.
The Coastal Atelier Brunch debuts on Sunday, 23rd of August 2026, and is now open for reservations as part of Sugar & Spice’s Sunday Brunch Edition.
