Born and raised in New Delhi, India, Chef Ashwani began his culinary career at several renowned Indian restaurants in the city, including Varq at the iconic Taj Mahal Hotel and Fire at The Park Hotel. These early experiences laid a strong foundation for his mastery of traditional Indian flavours.
With more than 25 years of experience in five-star hotels, Chef Ashwani is no stranger to Marriott International. His journey with the group began in 2016 at The Westin Pune, where he served as Chef de Cuisine at Kagan Indian Restaurant, further refining both his culinary expertise and leadership skills. In October 2019, he broadened his international experience by relocating to Indonesia, joining Handi Indian Restaurant at Le Méridien Jakarta, where he continued to elevate Indian cuisine until October 2024.
In November 2024, Chef Ashwani continued his culinary journey in Bali, contributing his expertise to several renowned Marriott International properties, including Elements by Westin, Renaissance Bali Uluwatu, Four Points by Sheraton Bali, and Sthala Ubud, a Tribute Portfolio Hotel, before joining Renaissance Bali Nusa Dua Resort.
With extensive experience across Marriott International’s diverse portfolio of brands, Chef Ashwani is known for blending traditional Indian flavours with contemporary presentation while maintaining authenticity. He specialises in delivering exceptional Indian dining and catering experiences, whether for MICE events, weddings, or bespoke celebrations, ensuring memorable culinary journeys for every occasion.
