This October, Padma Resort Legian will present Flavours of Latin & Nikkei, a special two-day dining event welcoming Guest Chef Silverio Martinez in collaboration with the resort’s own Chef Juan Carlos Jara Eyzaguirre.

Chef Silverio Martinez, Head Chef at CasaLena, a Latin American grill in Jakarta, is renowned for his passion for wood-fired cooking and his ability to bring out the depth of Latin flavours. His career has taken him to acclaimed kitchens across Asia and Mexico, including a role as Executive Chef with Marriott International in his home country.

At Padma Resort Legian, Chef Juan Carlos Jara Eyzaguirre, Executive Sous Chef, is the creative force behind TENKAI Japanese Nikkei Restaurant, curating its menus and shaping its unique dining journey. This event marks a significant milestone as his first collaboration since joining the resort. Born in Peru, Chef Juan Carlos has more than 14 years of international experience spanning Brazil, China, Uruguay, Turkey, Qatar, and Indonesia. At TENKAI, he infuses Nikkei cuisine with fresh energy, crafting dishes that connect personal stories with culinary artistry. Recent highlights include Parihuela Udon, inspired by his father’s favourite meal and featuring prawns, udon, and Japanese–Peruvian spices; Ise Ebi Popcorn, lobster tempura with passion fruit; and Tako, slow-cooked octopus served with anticuchos and huancaína sauces.

The two chefs share a special connection as South Americans, and this collaboration will see them draw on their shared heritage to create an authentic yet innovative dining experience.

Two Evenings of Flavours

  • Day 1: Izakaya Night
    Saturday, the 4th of October 2025
    Time: 6.00 pm – 10.30 pm | Venue: TENKAI Japanese Nikkei Restaurant
    A free-flow Izakaya-style menu blending Japanese Nikkei flavours with Latin American influences, accompanied by live acoustic guitar and vocals.
    Price: IDR 480,000++ per person.

  • Day 2: Latin American BBQ “Surf & Turf”
    Sunday, the 5th of October 2025
    Time: 5.30 pm – 10.30 pm | Venue: The Deli Grass Lawn
    A semi-buffet Latin American-style barbecue featuring an array of surf and turf dishes, set to DJ-curated Latino beats.
    Price: Based on selected items.

With the arrival of Guest Chef Silverio and Chef Juan’s first collaboration at the resort, Flavours of Latin & Nikkei promises two evenings of distinctive cuisine shaped by South American heritage and global experience. More than just a dining event, it is a celebration of culture, creativity, and collaboration at Padma Resort Legian.
