At Nautilus Bar Jakarta at Four Seasons Hotel Jakarta, every cocktail begins with a voyage.
The latest collection invites guests to explore Indonesia through 16 original cocktails inspired by four extraordinary landscapes: Mountains & Peaks, Lands & Fields, Forests & Jungles, and Seas & Ports. Each destination reveals a different side of the archipelago, where native botanicals, seasonal produce and regional flavours are thoughtfully interpreted into cocktails that celebrate the richness of Indonesia.
A Journey Rooted in Indonesia
For centuries, Jakarta has served as the gateway to the Indonesian archipelago, where cultures, ingredients and stories converged through the historic spice trade. Building on that spirit of exploration, Nautilus Bar’s latest chapter journeys beyond the trade routes to celebrate the landscapes that continue to shape Indonesia’s culinary identity today. From volcanic highlands and fertile valleys to tropical forests and vibrant coastal ports, every cocktail reflects the character of a place and the people behind its ingredients.
“Indonesia has an incredible way of telling stories through its ingredients,” says Julian Brigget, Bar Manager of Nautilus Bar Jakarta. “Where something grows, how it’s cultivated, and the people behind it all influence its flavour. We wanted this menu to honour that connection. Every cocktail represents a destination, inviting guests to experience Indonesia through landscapes they may know—or perhaps discover for the very first time. More than serving cocktails, we’re sharing the stories of the archipelago, one glass at a time.”
Four Landscapes, Four Flavour Journeys
Mountains & Peaks
Shaped by volcanic soils, cool elevations and mist-covered ridges, the Mountains & Peaks collection celebrates bold and comforting flavours inspired by Indonesia’s highlands. Aromatic ingredients and warming textures evoke the quiet majesty of the country’s mountainous regions.
Among the highlights is STMJ Plantations, a sophisticated interpretation of the beloved Indonesian beverage, combining dark spirits with white chocolate, coffee, ginger, cream and whole egg to create a rich, velvety cocktail layered with nostalgic warmth. Meanwhile, Manga Muda offers a brighter expression of the highlands, where Planteray 3 Stars Rum meets young mango juice, fragrant mace syrup and citrus, resulting in a vibrant cocktail that balances youthful freshness with gentle spice.
Lands & Fields
The Lands & Fields chapter celebrates Indonesia’s fertile agricultural heartlands, where orchards, plantations and cultivated fields produce ingredients that are generous in flavour and deeply rooted in local tradition.
Nectar blends Ketel One Vodka with bay leaf, Trigona honey, apple juice, lemon and a touch of mint liqueur. The result is a silky cocktail that showcases herbal complexity alongside delicate floral sweetness. In contrast, Mango Tango layers ripe mango with tequila, whisky, elderflower liqueur, cinnamon syrup and citrus, delivering a fruit-forward cocktail that is playful, aromatic and unmistakably tropical.
Forests & Jungles
Dense rainforests and tropical canopies inspire a collection defined by freshness, depth and discovery. Much like Indonesia’s jungles themselves, these cocktails reveal new aromas and flavours with every sip.
A standout creation is Gatot 2.0, where brown-butter pandan-infused whisky meets Pedro Ximénez sherry and aromatic bitters, creating a deeply layered cocktail rich in caramelised, nutty and herbal notes. Jeruk Jive explores a different side of Indonesia’s forests, combining tequila with andaliman pepper honey, Jeruk Medan, citrus and coconut milk for a refreshing yet complex profile that balances spice, creaminess and bright acidity.
Seas & Ports
Inspired by Indonesia’s maritime heritage and its centuries of trade and cultural exchange, Seas & Ports brings together bright, adventurous flavours shaped by coastal landscapes and ocean journeys.
Dockside Dondong captures this spirit through a lively combination of rum, homemade asam boi falernum and kedondong juice, delivering a refreshing balance of sweetness, salinity and tang. Meanwhile, Wortel Milk presents an unexpected yet elegant combination of Tanqueray Gin, carrot juice, lemongrass syrup, falernum, lemon and cream, creating a cocktail that is simultaneously fresh, aromatic and deeply satisfying.
Nautilus Favourites Return
While the menu introduces a new era for Nautilus, several beloved cocktails remain on the menu in response to continued guest demand. The Nautilus Favourites collection preserves five signature creations that have earned their place among the bar’s most celebrated serves.
Guests can once again enjoy the tropical character of P & J, the distinctive spice notes of Lada, the rich complexity of Koko Pala, the bold, savoury profile of Red Pearl and the timeless elegance of the Nautilus Martini. These drinks remain unchanged, offering loyal patrons the familiar flavours that helped shape the identity of Nautilus Bar.
New Bar Bites to Complement the Journey
Accompanying the cocktail programme is a refreshed selection of bar bites curated by the culinary team at Four Seasons Hotel Jakarta. Designed to complement the menu’s diverse flavour profiles, the dishes blend international bar culture with Indonesian influences.
Highlights include Prawn Satay, featuring spicy grilled prawns and bumbu rujak; a premium Beef Slider with a Wagyu beef patty and cheese sauce on a brioche bun; Signature French Fries served with homemade tomato ketchup and lime mayonnaise; and Steam Bun Rendang, showcasing braised Wagyu beef cheek, pickled mango and traditional rendang flavours in a soft steamed bun. Together, the food menu enhances the spirit of discovery that defines the Nautilus experience.
Designed for Nautical Nostalgia
Inspired by Indonesia’s rich maritime history and the legacy of the spice trade, Nautilus Bar celebrates the romance of seafaring adventures through both its drinks and design. Nautical-inspired interiors, evocative artworks and references to Jakarta’s historic Sunda Kelapa port create an intimate setting where guests can gather, connect and embark on a journey of flavour and storytelling.
