On 21 June 2026, The Trans Resort Bali invites guests to discover the answer through an extraordinary Michelin Fine Dining Experience, an exclusive one-night-only event held at The Pool Deck from 7.30 PM onwards.
As part of THE TABLE by JRE (Jeunes Restaurateurs), a prestigious international culinary series celebrating some of the world’s most innovative chefs, this special evening welcomes Chef Giorgio Bartolucci from Italy, a Michelin-recognized chef renowned for his refined approach to contemporary European cuisine.
Set beneath the stars and surrounded by the elegant ambiance of The Pool Deck, guests will embark on a carefully curated 5-course gastronomic journey, where every dish tells a story of craftsmanship, heritage, and creativity.

The evening opens with Egg & Beef, a sophisticated combination of slow-cooked beef and organic egg, followed by Duck Pastilla, Pâté & Fondant Onion, a refined interpretation of a Moroccan classic through a French Italian perspective. The journey continues with Pollock Risotto “Tricolore”, a contemporary expression of Italian identity that celebrates balance, freshness, and precision.

For the main course, guests will enjoy Slow-Braised Beef Cheek, exceptionally tender and glazed with honey and wholegrain mustard, accompanied by silky potato espuma and delicate tricolour wafers. The experience concludes with Chef Giorgio’s playful signature dessert, “RI…COTTA” Pineapple & Mango Sorbet, where tropical Balinese ingredients meet the soul of Italian pastry craftsmanship.
