Resinda Hotel Karawang, managed by Padma Hotels, recently hosted a remarkable culinary experience for lovers of Indonesian gastronomy.
The event, titled “Four-Hand Chef: Chef Arif Wicaksono x Chef Norman Ismail”, showcased a flavourful exploration of Indonesian cuisine, spanning Sumatra, Java, and Sulawesi.
Held on Saturday, 27 September 2025, from 18:00 to 21:00 at The Oryza Restaurant, the evening featured a collaboration between Resinda Hotel Karawang’s Executive Chef, Arif Wicaksono, and renowned Indonesian chef, Norman Ismail. Together, they presented seven special dishes inspired by the country’s diverse culinary heritage.

The journey began with Bola Ubi Cakalang (amuse bouche), a delightful sweet and savoury starter, followed by Sapi Maranggi (aromatic grilled beef), rich in spice and aroma. Guests were then treated to Rolade Ayam Bumbu Batak (chicken infused with Batak spices) from North Sumatra, Mangut Barramundi (fish in traditional spiced broth) with its warm traditional flavours, and Bebek Bumbu Hitam (iconic black spice duck) from Madura. The feast continued with Iga Konro (the iconic spiced beef ribs) from Makassar, before concluding with a sweet finale of Cake Tape Ketan Hitam (fermented black glutinous rice), a soft, indulgent dessert.

More than just a dinner, the collaboration between Chef Arif and Chef Norman offered a celebration of Indonesia’s culinary diversity, presented in a modern, elegant, and meaningful way. Guests embarked on a flavorful journey across the archipelago, guided by two talented chefs who harmonised tradition and creativity in every dish.
