The celebration begins at 6:00 PM as the sun starts its descent over the Indian Ocean, creating a natural spectacle that enhances the dining experience. The timing perfectly captures Bali’s famous golden hour, with dinner service continuing under the stars. Chef Wayan brings impressive credentials to this collaboration, having trained at the Washburne Culinary Institute and honed his skills in Michelin-starred kitchens. His expertise in Southeast Asian cuisine and commitment to sustainable practices inform every aspect of the evening’s menu.

The Easter celebration promises a multi-sensory experience, from the visual beauty of the oceanfront setting to the enticing aromas of wood-fire cooking, complemented by the natural soundtrack of waves and thoughtfully crafted flavours.

The Easter menu unfolds as a culinary journey, beginning with starters such as tender grilled aubergine with citrus miso butter, chilli oil, and a pomegranate herb salad. Seafood lovers will appreciate the delicate dumplings featuring sweet prawn in aromatic laksa sauce with king oyster mushroom and spring onion. Completing the appetiser selection is grilled octopus served with sweet potato, gochujang butter, roasted tomato, and squid ink emulsion.

Main course options showcase the versatility of wood-fire cooking. The fresh-caught market fish is served with torch ginger bisque sauce and house-made focaccia, while meat enthusiasts can savour 14-hour smoked Tokusen Wagyu brisket with gochujang BBQ sauce and potato gratin. A burnt cheese tart with berry compote and meringue provides a sophisticated finish to the meal.

ENVY’s beachfront location creates a naturally dramatic setting for this special event. The restaurant sits nestled within Holiday Inn Resort® Baruna Bali, offering panoramic views of the Indian Ocean framed by swaying palms and tropical gardens. As evening falls, subtle lighting transforms the space while the ocean breeze carries the aromatic smoke from the cooking stations.

This exclusive Easter dinner is priced at Rp700,000 net per person, with IHG One Rewards members receiving a 20% discount. The price includes an elegant wine pairing by Isola, perfectly complementing each course of the meal.
