Bel Étage brings the flavours of Kyushu to Jakarta with Taste of Hakata Bay, an exclusive three-day collaboration from the 18th to the 20th of September. Featuring a specially curated Seafood Dinner on Friday evening and signature brunch experiences on Saturday and Sunday, the event showcases the rich flavours, seasonal bounty and culinary traditions of Fukuoka.
Rooted in the rich food culture of the Kyushu region, Executive Chef Kenji Yamanaka of The Ritz-Carlton, Fukuoka, brings a distinctive culinary perspective shaped by his experience in Michelin-starred kitchens, including Georges Blanc and L’Osier. Known for blending Japanese artistry with classical French techniques, he creates refined dishes that highlight the coastal bounty of Fukuoka and the seasonal flavours of Kyushu.
Starting on Friday evening is Feast from the Sea, a seafood-themed dinner celebrating Japan’s finest ocean treasures, inspired by the coastal flavours of Fukuoka. The dinner features an array of seafood creations elevated by two signature sauces from Chef Yamanaka: Salted Kombu and Sake Sauce, delivering delicate layers of umami, and Teriyaki Glazed with Shiso Pistou, balancing sweet, savoury and herbaceous flavours.
Complemented by a selection of Japanese-inspired dishes throughout the buffet, the evening offers a vibrant showcase of Kyushu’s celebrated seafood culture.

Weekend brunch takes on a distinct Fukuoka flair on Saturday and Sunday, as Chef Yamanaka presents a collection of exclusive à la minute creations inspired by the flavours of Kyushu. Highlights include Charcoal Grilled Chicken Thigh with Black Japanese Seven Spice and Tartar Sauce, Pan-Seared Scallop with Salted Kombu and Sake Sauce, Sautéed Foie Gras with Leek and Teriyaki Glaze, and Steamed Rice with Fish and Ginger finished with Ankake Yuba, Mitsuba and Wasabi.
A special gueridon service further elevates the experience with Roast Beef Marinated in Shiokoji, served with Red Miso Sesame Sauce and prepared tableside. Complementing these specialities is an extensive selection of Japanese dishes curated by Chef Yamanaka, bringing the flavours of Fukuoka and Kyushu to Bel Étage throughout the weekend.
