Canggu’s restaurant scene is changing rapidly.

The area, once associated mainly with beach cafés and a laid-back lifestyle, has become one of Bali’s most dynamic dining destinations. As the international community grows, so do expectations. Guests are looking not only for good food, but for places with character, atmosphere, thoughtful design and a reason to come back.

12 Kitchen & Wine is part of this evolution. Located in Canggu, the restaurant brings together a globally inspired interior, an approachable Mediterranean-influenced menu, a constantly evolving wine list and two distinct moods throughout the day.

A Design Built From Hundreds of References

Unlike many restaurant projects where the interior is developed around a single design concept or reference, 12 Kitchen & Wine was created through a much more personal process.

Every detail of the restaurant was designed by its founder, Maksim Vertiakov. Rather than working from one particular reference, he collected ideas from restaurants around the world — from small independent places to Michelin-starred establishments.

“If a detail caught my attention, it went in,” says Vertiakov. “I looked at hundreds of restaurants around the world. It didn’t matter whether it was a small restaurant in the middle of nowhere or a place with three Michelin stars.”

The result is an interior made up of individual details that come together as one environment.

Large wooden waves run across the main hall. The bathroom is completely mirrored, with a cube-shaped screen showing moving waves that are reflected endlessly throughout the space. Three oversized leaves cover the terrace, protecting from both sun and rain.

And then there is the tree.

The tree was already growing on the property before the restaurant was built. It had been planted years earlier by the owner of the land. Instead of removing it, the team decided to preserve it and build the restaurant around it.

It is a small architectural decision with a larger meaning: the restaurant was designed to become part of its surroundings rather than erase what was already there.

Food Designed to Be Understood

The philosophy behind the kitchen is deliberately straightforward: food should be understandable to anyone, regardless of where they come from.

Canggu attracts guests from all over the world, and the menu was created with that international audience in mind. Instead of dishes that require explanation, the restaurant focuses on flavours that are immediately recognisable.

The kitchen centres around grilled dishes, seafood and a Mediterranean foundation. The approach is based on familiar ingredients and straightforward flavours, while the preparation and presentation give them a distinct character.

The idea is not to reinvent food for the sake of it, but to make familiar dishes memorable.

A Wine List That Never Stands Still

Wine is another important part of the concept.

The list took considerable time to build, with European wines forming its core alongside a strong selection of natural wines and several local labels.

But unlike a traditional wine list designed to remain unchanged for long periods, the selection at 12 Kitchen & Wine is constantly evolving.

Wine supply to Bali can be unpredictable. Some bottles become available, others sell out, and new producers and labels appear. As a result, the wine list is reviewed and adjusted continuously.

For guests, this creates another reason to return. A bottle or label that was not available on one visit may be waiting on the shelf the next time.

A Restaurant That Brings Guests Back

For Vertiakov, one of the most meaningful indicators of the restaurant’s success is not its online rating, but the number of guests who return.

Around 40–50% of guests on a typical day are regulars — a significant figure for a restaurant. In the industry, a repeat-customer rate of around 30–40% is generally considered healthy, placing 12 Kitchen & Wine at the upper end of that range.

The online reviews reinforce this picture. In less than a year since opening, the restaurant has reached a 5.0 rating on Tripadvisor across nearly 800 reviews, alongside a 4.9 rating on Google with close to 1,000 reviews.

The numbers point to something beyond a first impression: people are coming back.

Three Things That Make 12 Kitchen & Wine Different

There are three elements that particularly define the restaurant.

First, the wine bar operates almost as a destination within the restaurant. Floor-to-ceiling wine refrigerators create a dedicated zone with a strong focus on natural wines. Guests do not necessarily need to come for a full dinner — they can simply stop by for a glass and spend the evening there.

Second, the restaurant changes throughout the day. In the morning, the space is bright and calm, creating a relaxed setting for breakfast and coffee. After sunset, the lighting becomes softer, and the atmosphere changes completely, creating a setting for longer dinners and evenings over wine.

Third, the restaurant was built around a living tree. Rather than removing what was already growing on the land, the team incorporated it into the architecture. It is the kind of detail that may go unnoticed at first, but contributes to the feeling of the space.

A Different Kind of Dining Destination

Canggu is increasingly becoming a place where food, design and lifestyle overlap. Restaurants are no longer simply spaces where people go to eat. They can become meeting points, social destinations and part of the identity of the neighbourhood.

12 Kitchen & Wine reflects this shift through a concept that is intentionally personal rather than formulaic: a restaurant designed around details collected from around the world, a kitchen built on familiar flavours, a wine selection that changes with the island’s supply, and an atmosphere that evolves from morning to night.

In a rapidly developing dining scene, perhaps the strongest sign that a restaurant has found its place is simple: guests return.
