Tradition becomes the spark for creativity in every glass.
At KAWI Ubud, cocktails are more than recipes; they are conversations between tradition and modernity, between memory and invention, between the people who make them and the guests who enjoy them.
The idea behind KAWI has never been to define “Indonesianness” with a single meaning. Instead, it allows it to emerge naturally. The founders have always believed the team should be the heart of the bar, so the spotlight is placed on the Balinese and Indonesian bartenders who mix, pour, and share their own stories with every drink. This approach makes the space unique: for travellers, it offers an authentic way to taste and learn about local culture, while for locals, it feels like a bar they can truly call their own.
That philosophy comes to life in the cocktails. TEH takes the everyday comfort of tea—something you might find in a warung anywhere in Indonesia—and gives it the shape and depth of an Old Fashioned. Another favourite, DAUN KAYU MANIS, begins as a cinnamon-based herbal remedy and is reimagined as a refreshing highball. These are not simply clever twists; they are drinks that carry a sense of place, transformed into something unexpected yet instantly familiar.

The reactions say it all. Locals smile at the flavours that bring back memories of childhood or simpler times. International guests, tasting new and intriguing notes, lean in with curiosity, eager to learn the stories behind the ingredients. In both cases, the drinks act as a bridge, making people feel part of something both familiar and new.
Much of this creativity stems from the team’s freedom to bring their own lives into the mix. Bartenders are encouraged to experiment with ideas inspired by family recipes, favourite snacks, or personally meaningful ingredients. Not every experiment makes it onto the menu, but the process itself sparks fresh directions. The result is a menu that feels alive—ever evolving, always grounded in genuine experiences.
KAWI demonstrates that tradition does not have to be preserved in glass; it can be reshaped, reinterpreted, and poured anew. By treating Indonesianness as a source of inspiration rather than a fixed idea, the bar proves that heritage and creativity can flourish together. Each drink carries both respect for its roots and excitement for its possibilities.
