Exploring Culinary Frontiers: Diego Prado and Esther Merino’s Journey at the Desa

Experts in culinary innovation known for their groundbreaking work at Copenhagen’s renowned Alchemist restaurant, are joining our Desa family for the next two weeks.

Diego, a chef and researcher from Chile, has spent his career exploring the territory where science and cooking meet. With a focus on sustainability, creativity, and local produce, he’s worked in highly regarded research teams across the globe, including at Alchemist, Noma, Boragó and the innovative Basque Culinary Center where he led projects on taste-testing and sustainability.

Esther, a graduate in Gastronomy and Culinary Arts, arrives with a passion for front-of-house operations and beverage development to our team. She brings her background in anthropology to the table, creating unique drink experiences by mixing scientific principles with cultural insights.

During their stay, Diego and Esther will document our culinary journey at the Desa, employing their unique approach to enhance local ingredients and collaborate with our R&D team. Together with Chef Diego Recarte, they will curate a special eight-course tasting menu, blending delicious local produce with their uniquely flavour-enhancing techniques.

The duo’s visit will bring an inspiring exchange of ideas to our team, focusing on open-source assessment and creating a platform for future culinary inspiration.
