Holiday Inn Resort Baruna Bali has announced the launch of the ENVY Collaboration Series at ENVY Restaurant.

This signature dining initiative brings together innovative, creative, and experienced culinary partners to deliver extraordinary dining experiences. This new series reaffirms ENVY’s commitment to elevating Bali’s beachfront dining scene through exceptional flavours and memorable moments.

The inaugural event, titled “Two Chefs, One Table,” will feature renowned Balinese chef Putu Wahyu Saputra, a MasterChef Indonesia Season 6 Top 9 finalist and currently an Indonesian Chef Specialist based in Turkey. Taking place on Friday, 9th of January 2025, from 6.00 PM to 10.30 PM, this exclusive one-night-only collaboration promises a refined showcase of Indonesian cuisine with a contemporary twist.

The ENVY Collaboration Series is a recurring signature programme designed to partner with talented chefs, culinary innovators, and creative food artisans who share a passion for exceptional dining. Each collaboration introduces fresh perspectives, diverse techniques, and exciting flavours to ENVY Restaurant’s beachfront setting, where sweeping sunset views and live entertainment create an ideal backdrop for culinary exploration. Through this series, ENVY positions itself as a dynamic dining destination that continues to evolve while preserving its signature relaxed atmosphere.

Chef Putu Wahyu Saputra: From MasterChef Indonesia to the Global Stage

Chef Putu Wahyu Saputra rose to national prominence as a Top 9 finalist in MasterChef Indonesia Season 6, where he impressed audiences with his creativity and deep respect for Indonesian culinary traditions. His expertise spans Indonesian and Asian cuisines, Western and fusion techniques, menu development, and modern plating presentation. As a brand ambassador for leading culinary brands, Chef Putu has further cemented his reputation as an influential figure in Indonesia’s culinary landscape.

A Five-Course Journey Through Indonesian Flavours

The evening begins with a Tuna Sambal Matah Tartlet, where ocean-fresh tuna meets Bali’s iconic sambal matah in a golden, buttery shell—an elegant opening that balances tradition with refined execution.

Guests are then guided through a thoughtfully curated exploration of Indonesian comfort food, reimagined for the modern palate. Ayam Kecap Bao features pillowy steamed buns filled with sweet soy-glazed chicken, blending street food nostalgia with contemporary presentation. Salmon Gulai highlights premium seafood enveloped in fragrant Indonesian curry spices, demonstrating how traditional gulai techniques can be elevated using international ingredients. Crispy Indonesian Chicken Spring Rolls complete the savoury offerings, presenting familiar flavours in a format designed for sharing.

The culinary journey concludes with an Es Doger–Inspired Cake, a nostalgic homage to one of Indonesia’s most beloved desserts. Layers of delicate coconut sponge are paired with avocado cream, jackfruit, and young coconut, finished with palm sugar glaze and condensed milk essence—a sweet finale that honours heritage while embracing modern pastry techniques.
